Chartwells backs chow quality

We respectfully disagree with the commentator's opinion, published [in] The University News ["Charting Chartwells' chow, courtesy and convenience," March 7] that food options are slim on the Saint Louis University campus.

On the main campus, we offer 21 menu lines, in eight separate restaurants, in an area less than one mile long.

There are nutritious options at every restaurant, like our Balanced Choices line in Resident Dining. We have 10 different outlets where meals are made-to-order, such as Salsarita's and Ameren Café. These are designed to allow consumers to choose exactly which ingredients they wish and to omit ingredients they wish to avoid.

Chartwells manages 10 branded concepts from Subway at DeMattias to A&W at BSC. Here we produce menu items to the rigorous specifications dictated by each brand. An extensive quality brand audit is conducted at each location by independent inspectors on a routine basis. Chartwells' in-house brands, like Just For You Pasta Bar and Wild Greens, offer high quality ingredients, like antibiotic-reduced chicken and pork. We cook with zero-fat oils, serve fair-trade coffee and cage-free shell eggs. We partnered with Monterey Bay Aquarium to craft our Sustainable Seafood program. Chartwells is proud to be the industry leader in brining these socially conscious ingredients to the SLU community.

Chartwells cares about student opinion; that is why we do so many polls and surveys. We are fortunate to have an active Student Food Committee. We rely on their guidance in food decisions on campus. Since arriving on campus, Chartwells has expanded venues, including adding an all-vegetarian restaurant and organic market, and expanded hours. Chartwells now offers more variety and longer hours than any other previous competitor was able to offer. We think that is a good start. And we look forward to doing more …
